Honey Sriracha

Sweet first. Then it bites back.

Whole scotch fillet — never mince, never trim — sliced by hand and rubbed down with granulated honey, garlic, cracked pepper, paprika and a proper hit of sriracha. Then we do the hard part: nothing. It dries long and slow until every strip is dense, dark and packed with flavour.

No shortcuts, no tumblers, no machines doing the thinking. Just good South Australian beef and the patience to do it right.

Cut by hand

Whole scotch fillet, sliced with the grain by hand. You can't rush a good strip, and a machine can't feel the difference. We can.

Rubbed & rested

Honey sriracha rub worked into every slice, then left to sit so the sweet and the heat get properly acquainted.

Dried long & slow

Low and slow until it's dense, dark and chewy in all the right ways. Long, slow, and done by hand — it's on the bag because it's true.
